Couscous Pilaf

sautéed, side dish, simmered, vegetables

2 tablespoons butter or oil
1 small onion; chopped
1/8 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon paprika
1/8 teaspoon cardamom
1/8 teaspoon curry
1 1/3 cups couscous
1 3/4 cups water and
1/4 cup soy sauce or tamari soy sauce
3/4 cup frozen sweet peas
2 tablespoons chopped celery
1/2 cup raisins
2 tablespoons chopped parsley; (optional)

Sauté onion in butter or oil or combination, add other vegetables and turn off heat. Add a little butter to water in a separate pot, boil and add couscous, cover and cook for 3 minutes. Stir in vegetables, raisins and parsley. Turn off heat and let sit 5 minutes for fast cooking and 10 - 15 minutes for regular. Fluff and serve immediately. NOTES : Ground seminola cooked in broth with sautéed vegetables. Please note: the broth is made with water and soy sauce or can be made with vegetable stock, beef broth, or chicken stock.
