Savory-Swiss Chard Frittata

2 medium potatoes-good for baking
2 medium onions
4 ounces Gruyere cheese or Swiss cheese
3 tablespoons Savory Butter; (see recipe)
7 eggs
1/4 cup milk
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
3/4 cup blanched Swiss chard
PREPARATION: Slice potatoes 1/4-inch thick. Thinly slice the onions (1 cup) and grate the cheese (1 cup).
COOKING: Adjust oven rack to high position and heat broiler. Melt the Savory Butter in a 10-inch oven-proof skillet. Add the potatoes and sauté over medium-high heat until lightly browned, about 3 minutes. Add the onions and sauté until softened, about 2 minutes. In a medium bowl, whisk the eggs, milk, cayenne, and 1/2 teaspoon. salt. Stir in the Swiss chard and cheese. Pour the egg mixture over the vegetables and cook, covered, over very low heat until the frittata bottom is set and the top is still slightly runny, 10 to 12 minutes. Broil frittata until the top is set and golden, about 2 minutes.
SERVING: Cut frittata into wedges and serve immediately.
