5 pounds Coarse Ground Pork Butt
3 teaspoons Fennel seed
2 teaspoons White Pepper
1 1/2 teaspoons Sage Leaves
5 each Cloves pressed garlic
3 teaspoons Salt
1 cup White wine
Combine all ingredients, mix well and stuff into hog casing or make patties.
