RED SAUCE LAYER:
1 pound sweet Italian sausages; or spicy sausage
1 clove garlic
1 tablespoon basil
3 teaspoons salt
16 ounces canned tomatoes
12 ounces tomato paste
10 ounces lasagna noodles
CHEESE LAYER:
3 cups cottage cheese
1/2 cup Parmesan cheese or Romano cheese
2 tablespoons parsley
2 eggs; beaten
1/2 teaspoon pepper
1 pound sliced mozzarella cheese; easy if sliced when
purchased
Preheat oven to 375°F. Brown sausage; add tomatoes, tomato paste, basil, garlic, half the measure of salt and simmer 30 minutes. Cook noodles, drain and hold in cool water until ready. Mix cottage cheese, Parmesan cheese, eggs, parsley, remaining salt and pepper.
Prepare two complete Layers: Small amount of sauce on bottom. Noodles Cottage cheese mix. Red sauce. Repeat. Add mozzarella cheese on top during baking.
BAKE 35 minutes; rest for 10 minutes before cutting to serve.
